Ratatouille(ish) Stew

Just bought a bunch of ‘italian’ ingredients and threw together a healthy crock-pot stew!
Here is a picture of the stew after I threw everything in before cooking…

Brown 1-1.5 pounds lean ground beef (93/7%)

while it is browning, add 1/4 tsp salt, 1/4 tsp pepper, 1/4 tsp garlic and 1/2 tsp italian seasonings

Once it is brown, add:
◾28 oz can of diced tomatoes
◾3 cups water
◾1 cup frozen ‘italian’ green beans
◾1 cup chopped zucchini
◾1 cup chopped yellow squash
◾1 cup chopped portobello mushrooms
◾1 cup chopped eggplant
◾1 cup chopped carrots
◾1 cup frozen artichoke hearts
◾2 bay leaves
◾1 tsp italian seasonings
◾1/2 tsp garlic powder
◾1/2 tsp tumeric powder
◾salt and pepper to taste
◾fresh parmesean on top for garnish

Set on high for three hours, or low for six…. YUM

Pumpkin Protein Pancakes

Standard

High protein and high fiber, these are a great breakfast, or snack!

  • 1 1/4 cups flour (wheat, rice, buckwheat, all-purpose – whatever you want)
  • 2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp ginger
  • 1/2 tsp nutmeg
  • dash of cloves
  • dash of salt
  • 1 cup milk (cow, goat, coconut, almond etc…)
  • 1/4 cup flax seeds
  • 1/2 cup pumpkin puree
  • 2 scoops protein powder
  • 2 eggs

Throw it all into a bowl and mix well. Cook up like normal pancakes (2-3 minutes per side). You will love these! The are delicious I promise!

Deliciously Healthy Crock-pot Chili

Standard

It is always nice to come home to a nice pot of chili all ready for you on a cold night. Here is a great healthy recipe!

  • 1.5 pounds ground lean beef
  • 1.5 pounds lean ground turkey
  • 1 28oz can of diced tomatoes
  • 1 cup onions – chopped
  • 1 cup bell peppers – chopped
  • 1 cup carrots – chopped or shredded
  • 1 can kidney beans – drained
  • 1/2 cup water
  • 2 Tbsp chili powder
  • 2 tsp cayenne pepper
  • 2 tsp garlic
  • 3 tsp salt
  • 2 tsp cumin
  • 1 tsp turmeric

    Throw it all in a crock pot, cook on low for eight hours, or high for four hours! ENJOY!!!
